Rum Baba Rum Baba – Let’s Dig Into This French Delight !!! In the month of January, while vacationing in Goa, had this amazing dessert called "Rum Baba" at a French restaurant. You may think it's same as Rum Balls. No there is no similarities in both desserts apart from one ingredient that is rum. Rum Baba or Baba Au Rum (French name) is a yeast cake soaked in syrup made with hard liquor, usually rum. It was served to us with whipped cream, strawberry and 30 ml white rum. Yesterday I tried to recreate this dessert with whatever I had in my pantry. Ya presentation of my dessert sucks but trust me it tastes exactly the same or shall I say better 😜. A bit lengthy process though.  So here we go... Ingredients: For baba: 1. Butter:                                                                                           9 tablespoons 2. Kandyachi Khichadi or Onion Rice

A unique recipe by my grandmother in law called “Kandyachi Khichadi” or simply Onion Rice.

My hubby's maternal granny had treasure of some unknown, traditional yet lip smacking and healthy recipes. I was lucky enough to be able to spend my initial few years of marriage with her. (She was staying with my hubby's aunt, close to my place). She was not just good cook but had great leadership skills. Before shifting to the city, she used to stay at a very small village called "Galva" in Yeotmal district of Maharashtra state in India. She was almost like head of the village. Very loving, caring and yet very straight forward in nature she was. Today's dish is her one of the specialties called "Kandyachi Khichadi" Or simply put onion rice. This one is very summary dish and kind of one pot meal. You can have some buttermilk if you like.

So, the recipe goes like this...

Ingredients:

1. Bengal gram:                           1 cup (chana dal)
2. Rice:                                         2 ½ cups (uncooked)
3. Onions:                                    ½ kg
4. Ginger:                                     1 ½ inch piece
5. Oil:                                            4-5 tablespoons
6. Turmeric powder:                 1 teaspoon
7. Red chilli powder:                 3 teaspoons
8. Salt:                                         As per taste
9. Sugar:                                      2 teaspoons
10. Coriander leaves:                For garnish

Method:

1. Soak split Bengal gram (chana dal) for 5-6 hours in water.
2. Remove water and grind dal coarsely. Keep aside.
3. Cook rice and let it cool.
4. Chop onions.
5. Ground ginger to paste without water.
6. Heat oil in a pan. Add onions. Fry till nicely done. Make sure colour should be pink and not brown.
5. Add ground ginger. Sauté for few minutes.
6. Add ground dal. Again sauté.
7. Add turmeric powder, red chili powder, salt and sugar. Mix well.
8. Let the dal cook on low to medium heat and covered. Do not add water.
9. Now add cooked rice to this mixture.
10. Mix well. Cook for few minutes.
11. Garnish with fresh coriander.

Summer in Vidarbha region is very hot and dry. Onions help to maintain body's temperature and water level. Plus, chana dal is high in protein. So, all in all very healthy dish.
