Rum Baba Rum Baba – Let’s Dig Into This French Delight !!! In the month of January, while vacationing in Goa, had this amazing dessert called "Rum Baba" at a French restaurant. You may think it's same as Rum Balls. No there is no similarities in both desserts apart from one ingredient that is rum. Rum Baba or Baba Au Rum (French name) is a yeast cake soaked in syrup made with hard liquor, usually rum. It was served to us with whipped cream, strawberry and 30 ml white rum. Yesterday I tried to recreate this dessert with whatever I had in my pantry. Ya presentation of my dessert sucks but trust me it tastes exactly the same or shall I say better 😜. A bit lengthy process though.  So here we go... Ingredients: For baba: 1. Butter:                                                                                           9 tablespoons 2. Healthy Rava - Besan (Semolina - Gram flour) Laddoo !!!!

I was craving for something sweet for long. I always focus on eating healthy and wholesome. While thinking for couple of days about what can I make, I realized lot of traditional food is best in providing nutrients. Generally, we make this laddoo only in Diwali. But decided to make them during this quarantine period. Reasons are pretty simple they are healthy, yummy, simple to make, liked by all and goes well with some homemade chivda which becomes perfect evening snacks. Make it once and store it. In current situation where all household chores are done by me, it's not possible to cook all the time. So I am using such little hacks making my life easy allowing me more #metime during all this hotchpotch. This recipe belongs to my mom-in-law. 

Here we go:

Ingredients:

1. Semolina (suji or rawa):                                                                            1 ½ cups
2. Gram flour (besan):                                                                                   1 cup
3. Clarified butter (ghee):                                                                             1 ¼ cups
4. Sugar:                                                                                                           2 cups
5. Water:                                                                                                          Just enough to cover sugar
6. Cashew nuts, almonds & raisins:                                                           ½ cup
7. Cardamom powder:                                                                                  1 tablespoon

Method:

1. Heat ghee in a pan.
2. Roast gram flour on low heat until 90% done. The colour should be brown.
3. Add semolina in the same pan. Roast semolina along with gram flour on low to medium heat till aromatic. Turn off the heat.
4. Meanwhile, in another pan add sugar and water. Let sugar gets dissolve completely.
5. Once sugar syrup starts boiling, pour half of the syrup into roasted semolina - gram flour mixture. Mix
6. Let the remaining syrup simmer till it starts to form drops. To check if syrup is ready, put some syrup on the plain surface. If a drop is formed, then syrup is ready.
7. Pour into the roasted mixture. Mix.
8. Add dry fruits and cardamom powder. Mix again.
9. Roll small balls once mixture starts thickening. Ladoos should be rolled when the mixture is warm.
