Rum Baba Rum Baba – Let’s Dig Into This French Delight !!! In the month of January, while vacationing in Goa, had this amazing dessert called "Rum Baba" at a French restaurant. You may think it's same as Rum Balls. No there is no similarities in both desserts apart from one ingredient that is rum. Rum Baba or Baba Au Rum (French name) is a yeast cake soaked in syrup made with hard liquor, usually rum. It was served to us with whipped cream, strawberry and 30 ml white rum. Yesterday I tried to recreate this dessert with whatever I had in my pantry. Ya presentation of my dessert sucks but trust me it tastes exactly the same or shall I say better 😜. A bit lengthy process though.  So here we go... Ingredients: For baba: 1. Butter:                                                                                           9 tablespoons 2. Quick & Simple Choco Rum Cake !!!

Christmas celebrations are incomplete without cakes. But for traditional rum cake, preparations start 1-2 months in advance. So, what in case you forgot to soak nuts & raisins into rum? I have found out a solution ðŸ˜Œ. My 11 years old kiddo, a complete foodie, came to me this morning and wished for a Choco-walnut cake. And as a mom it’s hard to ignore your little one's wish. So here I am with my quick version of rum cake. I used very little rum since the cake is for my kiddo. Just to add the flavour.

For this you need…..

Ingredients:

1. All-purpose flour:                                3 cups (maida)
2. Baking powder:                                   2 ½ teaspoons
3. Baking soda:                                        1-2 pinch
4. Coco powder:                                      3 tablespoons
5. Instant coffee:                                     2 teaspoons
6. Unsalted butter:                                 2 ½ cups
7. Eggs:                                                     6
8. Chocolate essence:                            Few drops
9. Milk:                                                     1 cup
10. Walnuts:                                            100 grams
11. Choco chips:                                      50 grams
12. Dark rum:                                          ¼ cup (you can add more if not serving to kids)
13. Cooking oil:                                       ½ cup
14. Sugar:                                                 3 cups (add more for sweeter taste)

For garnish:

1. Chocolate compound: Few squares (I have used dark one. You can use milk as well)
2. Unsalted butter: 1 or 2 tablespoons

Method:

1. Preheat oven to 180 0 C for 10 mins. I have used O.T.G. for baking.
2. Sift together all-purpose flour, baking powder, baking soda and coco powder.
3. Coarsely grind walnuts.
4. Whisk butter. Add sugar and whisk till light.
5. Add eggs one by one and whisk again till light and fluffy.
6. Add all-purpose flour mix. Combine gently.
7. Add instant coffee, chocolate essence, milk, oil, rum, choco chips & crushed walnuts. Combine again. (Keep aside some walnut crush for garnishing).
8. Grease cake tin.
9. Pour cake batter into cake tin and bake for 50-60 minutes or until a wooden skewer inserted into the centre comes out clean.
10. Let it cool down.
12. Melt chocolate compound using double boiler method.
13. Remove from the heat and add unsalted butter. Mix.
14. Apply this choco-butter on the top and sides of the cake evenly.
15. Sprinkle some walnut crush.
16. Your cake is ready !!!!!
