Rum Baba Or Baba Au Rum

Rum Baba Rum Baba – Let’s Dig Into This French Delight !!! In the month of January, while vacationing in Goa, had this amazing dessert called "Rum Baba" at a French restaurant. You may think it's same as Rum Balls. No there is no similarities in both desserts apart from one ingredient that is rum. Rum Baba or Baba Au Rum (French name) is a yeast cake soaked in syrup made with hard liquor, usually rum. It was served to us with whipped cream, strawberry and 30 ml white rum. Yesterday I tried to recreate this dessert with whatever I had in my pantry. Ya presentation of my dessert sucks but trust me it tastes exactly the same or shall I say better 😜. A bit lengthy process though.  So here we go... Ingredients: For baba: 1. Butter:                                                                                           9 tablespoons 2. Mutter – Kulcha – Delhi Street Food In Your Kitchen !!!!

I watch lot of food videos in my free time. Have come across many videos of Delhi street food and particularly Mutter-kulcha ones. I have made a long list of food items and eateries which I want to try when I will visit Delhi. But it seems impossible in current situation. So, decided to recreate Delhi special street food called "Mutter - Kulcha". It's a wholesome one dish meal.

Ingredients:

For Mutter:

1. White peas:                                                                               1 cup
2. Onions:                                                                                      3 + 1 medium sized
3. Tomatoes:                                                                                 2 +1 medium sized
4. Tamarind pulp:                                                                        2 tablespoons (you can add more if want more tanginess)
5. Green chilies:                                                                            3
6. Lime juice:                                                                                4 tablespoons
7. Butter:                                                                                        1 tablespoon
8. Oil:                                                                                              1 tablespoon
9. Cumin powder:                                                                         1 teaspoon
10. Coriander powder:                                                                 ½ teaspoon
11. Red chili powder:                                                                    1 teaspoon
12. Black salt:                                                                                 ½ teaspoon
13. Black pepper powder:                                                            ¼ teaspoon
14. Chat masala:                                                                            1 teaspoon
15. Dry mango powder:                                                               ½ teaspoon
16. Chole masala:                                                                          1 teaspoon
17. Garam masala powder:                                                         ½ teaspoon
18. Salt:                                                                                           As per taste
19. Water:                                                                                       3 cups. 

For Kulcha: 

1. All-purpose flour:                                                                     250 grams
2. Salt:                                                                                             As per taste
3. Dry yeast:                                                                                   1 tablespoon
4. Warm water:                                                                             ½ cup + for kneading
5. Curd:                                                                                           1 tablespoon
6. Oil:                                                                                              2 tablespoon
7. Sugar:                                                                                         1 tablespoon
8. Butter:                                                                                        For applying while roasting kulcha

Method:

For Mutter: 

1. Soak mutter i. e. white peas for 6-8 hrs.
2. Remove water and wash with fresh water. Cook in pressure cooker with little water and salt. (5 whistles on high & 15 mins on low). Let it cool.
3. Finely chop onions, tomatoes, green chilies & coriander leaves.
4. In a pan heat oil & butter.
5. Add chopped onions. Sauté for about 2 mins.
6. Add chopped tomatoes and green chilies. Sauté again. We are not really cooking onions and tomatoes here.
7. Add red chili powder, cumin powder, coriander powder, dry mango powder, black salt, chat masala, garam masala, black pepper powder, chole masala. Stir.
8. Add cooked peas, little water, tamarind pulp, lemon juice. Mix.
9. Mash a little using masher.
10. Adjust seasoning.
11. Add lot of chopped fresh coriander. Mix. Turn off heat. 

For Kulcha: 

1. In 1/2 cup warm water add sugar. Let sugar dissolves.
2. Add dry yeast. Let it sit for 10 mins. Stir
3. Knead dough using all-purpose flour, yeast solution, oil, salt, curd and warm water. Cover with wet cloth for 1 hour.
4. Knead again.
5. Make small balls and roll roties.
6. Roast kulchas applying little butter. 



While serving add chopped onions, tomatoes and fresh coriander to mutter. 

Serve with kulcha. Tastes yumm 😋😋😋
