Rum Baba Or Baba Au Rum

Rum Baba Rum Baba – Let’s Dig Into This French Delight !!! In the month of January, while vacationing in Goa, had this amazing dessert called "Rum Baba" at a French restaurant. You may think it's same as Rum Balls. No there is no similarities in both desserts apart from one ingredient that is rum. Rum Baba or Baba Au Rum (French name) is a yeast cake soaked in syrup made with hard liquor, usually rum. It was served to us with whipped cream, strawberry and 30 ml white rum. Yesterday I tried to recreate this dessert with whatever I had in my pantry. Ya presentation of my dessert sucks but trust me it tastes exactly the same or shall I say better 😜. A bit lengthy process though.  So here we go... Ingredients: For baba: 1. Butter:                                                                                           9 tablespoons 2. Mumbai Street Style Ragada Patties!!!

Compulsory lock down due to Covid- 19 is actually a blessing in disguise. I am making most of it. Completing pending tasks, catching up with my favourite afternoon nap and trying new recipes, I am doing it all. I was bored with regular meals and was craving for something chatpata. All restaurants here are closed already so decided to make Mumbaya Ragada Patties.

So here we go...

A. Green chutney:

Ingredients:

1. Fresh coriander:                                              1 cup
2. Green chilies:                                                  4
3. Garlic:                                                               15 cloves
4. Fresh mint:                                                      ½ cup
5. Cumin seeds:                                                  1 teaspoon
6. Salt:                                                                  As per taste
7. Water:                                                              1 cup

Method:

Grind together fresh coriander, green chilies, garlic, mint, cumin seeds, salt and water. Add water in small quantities and not in one go.

B. Red chutney:

Ingredients:

1. Fresh red chilies:                                              5-6
2. Garlic:                                                                15 cloves
3. Cumin seeds:                                                    1 teaspoon
4. Salt:                                                                    As per taste
5. Water:                                                                1 cup

Method:

Grind together fresh red chilies, garlic, cumin seeds, salt and water. If you are using dry chilies, soak chilies in hot water for 1/2 hour and then grind.

C. Tamarind chutney:

Ingredients:

1. Tamarind:                                                             1 cup soaked in water for ½ hour
2. Jaggery:                                                                1 cup
3. Sugar:                                                                    1 cup
4. Chat masala:                                                        1 teaspoon
5. Cumin-coriander powder:                                1 teaspoon
6. Ginger:                                                                  Small piece grated
7. Water:                                                                   1 ½ cups
8. Salt:                                                                       As per taste

Method:

1. Make tamarind pulp with soaked tamarind.
2. Boil together tamarind pulp, water, sugar, jaggery, salt, cumin powder, coriander powder, chat masala & grated ginger.

D. Ragada:

Ingredients:

1. White peas:                                                            2 cups
2. Onions:                                                                   2 medium size
3. Garlic:                                                                     10-15 cloves
4. Green chilies:                                                        2
5. Fresh coriander:                                                   ½ cup
6. Cumin seeds:                                                         1 teaspoon
7. Water:                                                                     3-4 tablespoons + 4-5 cups
8. Red chili powder:                                                 1 teaspoon
9. Turmeric powder:                                                ½ teaspoon
10. Garam Masala:                                                   ½ teaspoon
11. Salt:                                                                       As per taste
12. Oil:                                                                        2 tablespoons

Method:

1. Soak white peas for minimum 6 hrs.
2. Clean, wash & pressure cook white peas. (4-5 whistle on high flame & 15 mins on low flame).
3. Grind together coriander, chili, garlic & cumin seeds.
4. Heat oil in a pan.
5. Add finely chopped onions. Sauté.
6. Add coriander-garlic-chili-cumin seeds paste. Sauté.
7. Add cooked white peas, turmeric powder, red chili powder, garam masala powder, salt and water. Mix well.
8. Boil for 10 mins.

E. Patties:

Ingredients:

1. Boiled potatoes:                                                        1 kg
2. Bread slices:                                                              6
3. Chat masala:                                                             2 teaspoons
4. Cornflour:                                                                 ½ cup
5. Salt:                                                                            As per taste
6. Turmeric powder:                                                   ½ teaspoon
7. Oil:                                                                             To shallow fry

Method:

1. Mash boiled potatoes.
2. Dip bread slice in water. Remove excess water by pressing them tightly and add to mashed potatoes.
3. Add salt, chat masala, turmeric powder and corn flour. Mix well.
4. Make small round patties and shallow fry on medium heat.

F. Serving:

1. In a plate first add patties.
2. Add ragada, all chutneys.
3. Top it with finely chopped onion, shev and fresh coriander.
